I love Chipotle. Like a lot. There are so many amazing places to eat in Nashville, yet every time Cody and I make the trip into the city we eat at Chipotle, because we love it so much. What's funny is that I used to hate it. I remember being in high school walking in and thinking OMG?!? I don't know what to do in this place, what do you mean they don't have a #1 combo?! This is true. This is also coming from the girl in high school who went to chick-fil-a for the first time not knowing anything about it and ordered a cheese burger. Yup. But that's another story for another time. Today I want to share with y'all the greatest guacamole recipe because it came straight from Chipotle itself. 

Cody and I have Friday's off so we typically go on "Day Dates" (couples y'all should do this it's so much fun) but one particular Friday we went and the wrapping around Cody's burrito had their guacamole recipe on it and I about passed out. I legit felt like it was a mistake and that the wrapping of Cody's burrito was intact a secret piece of paper we were never intended to see. But I did, and you bet I took a picture of the wrapping and like the penguins of Madagascar sat back in my seat like "you didn't see anything..." 

Turns out, they know their guacamole is the best and they want everyone to have it, so to make it easier on you from having to look at small print on wrapping for a burrito I have typed it out below for you. It's super simple and easy to make, and y'all.. It taste just like theirs and I may or may not have done a happy dance after one bite. 

Step 1: 

Gather your ingredients! You will need: 

  • 2 Ripe Avocados 
  • 2TBSP of cilantro 
  • 2tsp of citrus juice (1/2 a lemon and 1/2 a lime)
  • 1/4 cup of red onion 
  • 1/4 tsp of Kosher salt 
  • 1/2 jalapeno (including the seeds)

Step 2:

Make sure your avocados feel firm yet, squishy. (like the palm of your hand) and dark green in color. 

Step 3: 

Your now at home ready to make this wonderful dip! 

Cut the avocado in 1/2 , and spoon the good stuff out of the avocado and put it in a medium sized bowl. (keep the core of the avocado, on the side somewhere you'll use these in the end)

Step 4:

Add your salt and then use a fork, or a potato masher to mash the avocados until they are smooth. 

Step 5: 

Once you have mashed your avocados, pour the citrus juice (1/2 a lemon and 1/2 a lime) into a separate bowl, add in the red onion, cilantro, and jalapeños. Add the citrus mixture to the avocados, mix and mash (and do a little dance because you are about to get to eat this amazing dip)

Step 6: 

Taste Test Time! Take a bite, I promise you'll hear angels singing. 

 

That's it! I have been buying organic blue corn chips for us to have at the house, but you can use the chip of your families preference. Let me know what you guys think in the comments below!
